What is Xanthan Gum?

Xanthan Gum is a plant-based material created by mixing simple carbohydrates with a common naturally-occurring bacteria.  It is used to help thicken, emulsify (helps with mixing of fats or other ingredients in liquids), and increase viscosity of liquids.  It also helps create a creamier texture.  Typically corn or sugar beets are used to create xanthan gum.
